My sister commented that the dressing used in this soba noodle salad is way superior compared to the simple soy, sugar, mirin and vinegar dressing. I felt that both types of dressing worked very well except the former is nuttier than the latter.
This recipe involves some chopping and little cooking. It is ideal for those who do not want to mess up their kitchen.

Recipe: Soba Noodle Salad (Serves 2)
-Ingredients:
A:
-1 packet of cha soba (300 grammes)
-A pot of boiling water
B:
-1 carrot, peeled, chopped into cubes
-1 Lebanese cucumber, deseeded, cut into thin strips
-1 2-inch section of daikon pickle, cut into cubes
-A small handful of pickled ginger
-Around 10 cherry tomatoes, halved
-1/2 teaspoon of roasted black sesame seeds (Readily available in most Asian stores)
-1/2 teaspoon of nori + sesame rice seasoning
-1 egg tamago/ omelette cut into strips
-1 ham, sliced into strips/Marinated salmon (Optional)
C:
-Two tablespoons of kewpie dressing + A dash of pepper
-Instructions:
1. Prepare ingredients from list B. Set aside.
2. Boil soba noodles according to instructions on packet. After boiling, directly place soba noodles in cold water. Drain and place in two bowls.
3. Assemble the ingredients accordingly.
4. Finish off with the kewpie dressing. You can serve it warm or cold.
