Simply Cooking: Poached Ocean Trout with Homemade Teriyaki Sauce

Panda scored a whopping 86 for her LTCL music exam. It’s not easy scoring 80 plus for LTCL, y’all. Her results were reviewed again to confirm that she deserved the 86. She could have gotten more -89- if she brought in the original score (They cut her three marks for that). Nope, she did not bring in photocopies. She brought in nothing, which is truly impressive. I mean, it’s a 40 minute program (or was it 45?) and she memorized all of the 40 minute stuff.

Now, now, the brain is truly a wonderful thing.

 I’m glad that her hard work paid off. Seriously, the uni has been giving her shit marks. She played the same songs she played for her uni exam and sat for the LTCL exam five days later. She scored a 73 for her uni exam and a 86 (I’m thinking 89) .

 The discrepancy is clearly troubling. You see, my sister is caught in a political turmoil within the music faculty... And now that there is solid prove that my sister can play well (She screamed in joy that her 7 hours per day of practicing paid off!), there is no reason for her to continue getting 68 or 70 or somewhere there!! My parents were glad too because all this while, they were worried that she would only remain average. AVERAGE IS NOT GOOD FOR THE MUSIC INDUSTRY. If you want to make it big, it is not wise to just stay along the sidelines and wait for something to happen.

 Anyway, we were all happy. She’s probably the happiest and the very grateful for her teachers. They trained her well and she worked hard. Three years ago, she failed her first diploma exam and had to re-sit it again. Fast forward to now, she aced it with an 86 (89).

 Finally, the words: “Persistence is the key to success” works for her. She has been complaining about how the world is a disappointing place because no matter how hard she worked, it is not going to pay off because of the human factor.

 Also, I forgotten to mention this, a few weeks before she got her results, I dreamt that my sister scored really high marks for her LTCL exam. And two hours before we received the good news, I told my sister about my dream.

 Coincidence? Or not?

Uber good news and sixth sense aside, I’ve decided to cook up some poached salmon in homemade teriyaki sauce to celebrate her EPIC WIN. Yes, I took the leap and decided that I should stop buying teriyaki sauce because it’s SUPER darn easy to make at home.

Now that I've made it, I feel like a fool spending 5 AUD on a bottle of teriyaki sauce that doesn’t taste half as good as the homemade stuff.

 Lesson of the day? When you can make it on your own, do not rely on others. I shall stop blah-ing here. I probably sound like a bore now. Recipe is as follows!





 Ingredients:

 A:
 -2 Ocean Trout fillets (150 grammes each) at room temperature.

B:
-1/2 cup of soy sauce
-1 1/2 cup of water
-1 tablespoon of dark soy sauce
-2 cm of old ginger, sliced
-3 tablespoons of mirin
-3 tablespoons of brown sugar + 30 grammes of rock sugar
-A good dash of cooking sake
-1 drop of sesame oil
- A pinch of pepper

C: To be used later
-1 tablespoon of honey

Instructions:

1. Put ingredients B into a 1L or so pot. Bring it to boil and stir until sugar dilutes. Bring it down to a simmer. Add in ocean trout.

2. Poach for 10-15 minutes, depending on how done you want it to be. I prefer it to be slightly smoother, so I'll usually go for 10-12 minutes?

3. Then, pour about a quarter of the poaching liquid into a smaller sauce pan. Bring it to a boil. Then add 1 tablespoon of honey. Reduce the sauce to desired viscosity. Pour the sauce over the fish. :)

4. Garnish it with whatever you wish! Best enjoyed with brown rice and greens.
